Potato starch has 1/8 the lipid (fat) content of corn. Lipids reduce solubility and hinder bonding.

Potato starch has much less protein so it causes less foam.

Because potato starch has a lower pasting temperature than corn, it cooks more easily and consistently.

In many applications, potato starch is the better choice!
